Eggless Egg Salad
from RAWvolution: Gourmet Living Cuisine by Matt Amsden
Equipment
  • High Speed Blender

Ingredients


  • 1/2 cup pure water
  • 1/2 cup fresh lemon juice
  • 1 1/2 tsps turmeric
  • 2 cloves garlic, peeled
  • 1 1/2 cups raw macadamia nuts or cashews
  • 1/3 cup each: chopped scallions, chopped celery, chopped red bell pepper
Instructions

  • In a high speed blender, combine water, lemon juice, turmeric, garlic, sea salt, and nuts. Blend until smooth.
  • In a medium mixing bowl, combine the blended mixture with the scallions, bell peppers and celery. Mix well and serve.

Recipe Hints

  • You can do a combination of both macadamia nuts and cashews
