Onion Bread

Equipment
  • Dehydrator
  • Food Processor

Ingredients
  • 2 1/2 lbs sweet onions
  • 1 cup ground sunflower seeds
  • 1 cup ground golden flax seeds
  • 1/2 cup olive oil
  • 3 oz. Nama Shoyu

Instructions
  • Grind the sunflower seeds in the food processor.
  • Grind the flax seeds in the Vita-Mix blender or food processor.
  • Put the ground sunflower and flax seeds in a large bowl.
  • Coarsely chop the onions in a food processor and add to bowl with ground sunflower and flax seeds.
  • Add the olive oil and Nama Shoyu and mix by hand.
  • Place about 2 cups of the mixture on a Teflex sheet on a dehydrator tray and spread evenly to about 1/4 inch thick.
  • Dehydrate at 105 degrees for 24 hours. Flip the tray over onto another tray without a Teflex sheet and dehydrate for another 12 hours or so.
  • Once done, cut the bread into 9 equal pieces.


Recipe Hints
  • Grind the flax seeds in the Vita-Mix blender for a finer "flour"
  • When chopping the onions in the food processor make sure they don't get too mushy. Optionally, you can thinkly slice the onions by hand.
  • Dehydration times are estimates depending on the humidity in the air, the power of the dehydrator, and the moisture of the bread mixture. Check the bread periodically throughout the dehydration process.
