Tostada with Fresh Tomato Salsa

Equipment
Ingredients
- 1 cup shredded lettuce (romaine or spring mix)
Walnut Meat
- 1 1/2 cups raw walnuts, finely ground in a food processor
Cheese Filling
- 1/4 cup fresh lemon juice
- 2 to 3 cloves garlic, peeled
- 1 to 1 1/2 cups raw cashews, macadamia nuts, pine nuts, or combination
Instructions
Walnut Meat
- In a small mixing bowl, combine the walnuts, cumin, chili powder, and coriander and mix well. Add the Nama Shoyu and mix well again.
Cheese Filling
- In a high speed blender, combine all of the filling ingredients and blend until the cashew cheese is uniform and smooth.
Assembly
- Spread about a third of the cheese filling on one piece of Onion Bread.
- Crumble about a third of the walnut meat on top of the cheese filling.
- Sprinkle about a third of the Fresh Tomato Salsa on top of the walnut meat.
- Top the tostada off with about a third of the shredded lettuce.
- Repeat with the remaining Onion Bread, walnut mixture, and cheese filling.
Recipe Hints
- Add the Nama Shoyu in gradually and taste as you go along to make sure it's not too salty.
- Add a layer of Guacamole for an extra creamy taste!
